Sweet-Hot Baby Back Ribs Recipe

Joseph Coupal - Tuesday, July 03, 2018

The Fireplace Shop and Grill Center at West Sport in Sudbury, MAOur directions for these juicy baby back ribs are for a two-burner gas grill. If you have a three-burner grill, light both sides, and leave the center portion off.

Ingredients

  • 2 tablespoons ground ginger
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon dried crushed red pepper
  • 3 slabs baby back pork ribs (about 5 1/2 lb.)
  • 2 limes, halved
  • Sweet-Hot 'Cue Sauce

Sweet-Hot 'Cue Sauce Ingredients

  • 2 (10-oz.) bottles sweet chili sauce
  • 2 cups ketchup
  • 1/3 cup firmly packed dark brown sugar
  • 1 teaspoon ground ginger
  • 1 teaspoon pepper
  • 1/2 teaspoon dried crushed red pepper flakes

How to Make Ribs

Step 1

Combine first 4 ingredients in a small bowl.

Step 2

Rinse and pat ribs dry. If desired, remove thin membrane from back of ribs by slicing into it with a knife and then pulling it off. (This will make ribs more tender.)

Step 3

Rub ribs with cut sides of limes, squeezing as you rub. Massage ginger mixture into meat, covering all sides. Wrap ribs tightly with plastic wrap, and place in zip-top plastic freezer bags or a 13- x 9-inch baking dish; seal or cover, and chill 8 hours. Let ribs stand at room temperature 30 minutes before grilling. Remove plastic wrap.

Step 4

Light 1 side of grill, heating to medium-high heat (350° to 400°); leave other side unlit. Place rib slabs over unlit side, stacking 1 on top of the other.

Step 5

Grill, covered with grill lid, 40 minutes. Reposition rib slabs, moving bottom slab to the top, and grill 40 minutes. Reposition 1 more time, moving bottom slab to the top; grill 40 minutes.

Step 6

Lower grill temperature to medium heat (300° to 350°); unstack rib slabs, and place side by side over unlit side of grill. Cook ribs 30 more minutes, basting with half of Sweet-Hot 'Cue Sauce. Remove ribs from grill, and let stand 10 minutes. Cut ribs, slicing between bones. Serve ribs with remaining Sweet-Hot 'Cue Sauce.

How to Make Sauce

Step 1

Combine sweet chili sauce and remaining ingredients in a saucepan over medium-high heat. Bring mixture to a boil; reduce heat, and simmer 30 minutes.

Step 2

Note: For testing purposes only, we used Maggi Taste of Asia Sweet Chili Sauce.

Recycle Plastic Outdoor Furniture: What are the Benefits Over Wood

Joseph Coupal - Wednesday, June 06, 2018

The Fireplace Shop and Grill Center at West Sport in Sudbury, MA, Boston, MAWhat is better recycled plastic Adirondack chairs or wood? You need to consider many factors when deciding what material to choose for your outdoor furniture.

Enduring the Weather

When evaluating outdoor furniture, you’re probably going to look for many of the same characteristics that you value in indoor tables, chairs and sofas – durability, comfort and style (and of course price). The primary difference, however, is that patio furniture has to endure exposure to the weather outside.

Before you decide, it’s important to understand the strengths and weaknesses of various material options. Determine how well each aligns with the requirements of your residential or commercial environment, as well as your personal preferences and priorities. Choosing the “best” material for outdoor patio furniture is dependent on matching your specific needs with the inherent qualities of each substance, since each situation is unique.

Factors to Consider for Outdoor Materials

Outdoor furniture frames, tabletops and upholstery need to retain structural integrity and their appearance over many seasons, and through a variety of weather conditions. Additionally, the time and effort needed to maintain materials throughout the year, as well as their “green-ness” and costs are important aspects to examine.

Outdoor Furniture Materials - Rain & Moisture

Rain & Moisture

In Massachusetts there are frequent rainstorms and high humidity, you want to be sure that your furniture is resistant to damage from various water-based issues. Standing water or retained moisture can not only physically degrade material, it can lead to health risks.

Mold, Mildew & Rot

Humid or moist conditions create an environment where various fungi thrive. Organic materials that retain water are susceptible to mold and mildew, which can cause respiratory problems, irritation and other health issues. However, they typically don’t damage the material and can be cleaned off. Rot, on the other hand, leads to biodegradation and decomposition (decay) of the material.

Rust & Corrosion

Metals that contains iron or steel are vulnerable to corrosion, when they are continually exposed to water and oxygen. The corrosive oxidation process slowly weakens these metals, resulting in visible rust and other discoloration. Salt in the air and water accelerate the chemical process, so rusting is often more prevalent in coastal regions.

Warping

Materials that allow water penetration can dry unevenly, resulting in warping (twisting or bowing) of the original shape. Initially, it may be imperceptible, but over time it can noticeably distort the material, misalign seams and loosen screws and other fasteners used to hold the furniture together.

Outdoor Furniture Materials - Sun & Temperature

Sun & Temperature

We have lots of sun here and dramatic seasonal climate shifts. So, you’ll need to look for outdoor materials that can withstand damage from harsh UV rays and fluctuations from extreme heat to cold.

Fading

Constant exposure to the sun can cause many materials to fade and lose their luster over time. The aesthetic change can be appealing (e.g. patina) or simply a decreased vibrancy of color or uneven spotting.

Cracking

Some materials noticeably expand and contract when they are heated or cooled. They can crack, split, warp or become brittle when exposed to extreme temperatures or drastic fluctuations. Dry air can also cause furniture to bend and crack.

Heat Retention

The heat can also lead to other logistical problems. Patio furniture that is left out in the sun can heat up, making it uncomfortable (or unsafe) to touch. Nobody wants to burn their skin when they sit down in or attempt to reposition a poolside lounge chair.

Outdoor Furniture Materials - Wind

Wind

If you live in an open and extremely windy area, it’s important that your outdoor furniture is heavy enough that it doesn’t tip over or blow away. It doesn’t take much to damage a beautiful light weight deck chair or dining table when challenging Mother Nature, so it’s better to be safe than sorry. Otherwise, you’ll need to continually store or secure your items when they’re not in use.

Outdoor Furniture Materials - Durability

Durability

Some outdoor materials may last for years under ideal conditions, but might need to be replaced every couple seasons when exposed to inclement weather. Others can withstand a myriad of elements for a lifetime and still look new. Another variable that relates to durability is usage. If you eat outside on your patio dining table only a few times each summer, then it will have less wear and tear than sun loungers and daybeds that line the poolsides of popular upscale resorts and hotels. The more frequent the use, the more durable the materials should be.

Outdoor Furniture Materials - Cleaning & Care

Cleaning & Care Difficulty

Aesthetic and functional durability is also affected by how well you take care of your patio furniture. Some materials require very little attention season after season, and are quick and easy to clean with simple soap and water. Others require more time-intensive care and special products to keep them looking great and working properly. If your time is at a premium, or you just don’t want the hassle, you may want to opt for lower maintenance materials.

Outdoor Furniture Materials - Eco-Friendliness

Eco-Friendliness

Today, everyone is aware of the environmental impact of production processes and the raw materials that go into products, even if they don’t know the specifics. All things being equal, most people (hopefully) prefer to be ecologically responsible. Fortunately, most luxury brands of outdoor furniture have adopted “green” manufacturing practices and utilize materials that are biodegradable, recyclable or certified by eco-friendly organizations. That said, different outdoor materials do vary in their renewability.

Outdoor Furniture Materials - Cost

Cost

At the end of the day, most everyone looks at the financial implications of choosing one material over another for furniture. You need to stay within your budget, but it’s also important to understand how expensive materials are in the long run and their price versus benefits value. Will it need to be replaced frequently? Does it take an inordinate amount of time and effort to maintain? These are key cost considerations that you might not immediately think of when evaluating alternatives.

Are Pellet Grills Better?

Joseph Coupal - Wednesday, May 16, 2018

The Fireplace Shop and Grill Center at West Sport in SudburyIt's barbecue season, and there's a grill that manufacturers and chefs say makes meat healthier and taste better. They say that wood pellet grills use an indirect cooking method, which reduces the formation of carcinogenic chemicals.

Wood-pellet grills, pioneered more than two decades ago are growing in popularity. Pellets are made of only wood and come in flavors such as applewood, mesquite and hickory; they cost $1 a pound, which lasts an hour.

As for the flavor, experts have spoken: Pellet grills are gaining prestige among professional grillers. Two of the top five teams in the Kansas City Barbecue Society competitions exclusively used pellet grills.

In two tests, competition grillers took turns grilling foods on a pellet grill and on a charcoal grill. The pellet grill won the chicken-breast competition in part due to the subtle applewood flavoring it imparted. The charcoal grill easily won the burger and steak tests as tasters preferred the black grill marks it left and the more intense flavor imparted by the direct flame. The Traeger left faint grill marks.

The pellet grill won with the chicken 8-1, with four tasters saying they liked them equally. The pellet-cooked breasts were more moist than the charcoal-grilled ones, with a very slight taste of applewood smoke.

For the Pork baby back ribs, because of the time involved, there was no comparison made with the charcoal. The ribs were smoked for three hours on the pellet grill and finished by grilling at 225 degrees for 2½ more hours. They came out succulent and tender according to all tasters.

EPA Says Burning Wood is Carbon Neutral

Joseph Coupal - Tuesday, May 08, 2018

The Fireplace Shop and Grill Center at West Sport in Sudbury, MAThe Environmental Protection Agency (EPA) declared last week that burning wood is carbon neutral.

The announcement, made by EPA Administrator Scott Pruitt during a meeting with Georgia forestry leaders, signals an administrative policy shift that will treat all burning of biomass as carbon-neutral, according to an EPA statement.

"[This] announcement grants America’s foresters much-needed certainty and clarity with respect to the carbon neutrality of forest biomass,” Pruitt said in a statement. “Managed forests improve air and water quality, while creating valuable jobs and thousands of products that improve our daily lives. This is environmental stewardship in action.”

Members of Congress have made similar legislative pushes to recognize wood burning as carbon neutral. In 2016, a group of Senators tried to pass the policy change through larger bipartisan energy bill. More recently, a provision included in the fiscal 2018 federal spending bill unveiled in March urged the heads of the EPA and Energy Department to “reflect the carbon-neutrality of forest bioenergy and recognize biomass as a renewable energy source.”

Donna Harman, president of the American Forest and Paper Association, said the policy decision reflects "long-standing scientific principles and Congressional direction."

“We are one of the largest manufacturing sectors in the nation, eager to strengthen the economy and boost U.S. job creation with the support of public policy that levels the playing field with competitors around the globe," Harman said in a statement. "This new EPA policy is an important milestone in implementing the Congressional directive to produce clear and simple policies and acknowledges the scientific record on the carbon neutrality of forest-based, renewable biomass."

The debate over the emissions for burning wood took center stage during the Obama administration's Clean Power Plan discussions, as they considered how to treat wood-burning power plants.

Scientists have long thought that burning biomass, including wood, does emit carbon dioxide pollution and that labeling it carbon neutral is not only inaccurate but could have long-standing negative effects on regulations meant to thwart climate change. But foreign countries have more recently looked toward wood-burning as alternative energy sources that could help to reduce greenhouse gas emissions.
